Putting up the harvest.

Vegetables for breakfast, lunch and dinner…it turns out to be quite a challenge to not waste anything, so the beet greens and broccoli leaves are going in the dehydrator for winter smoothies, tomatoes are being canned, and even zucchini ( for winter zucchini bread!) After the chicken processing is at least a few days of chicken stock canning….for fall and winter soups. Even the tomato skins are in the dehydrator for making tomato paste, and amazingly, 2 large broccoli heads dehydrates into a small pint jar! The broccoli stems are fed to the rabbits, along with all the other garden excess like cauliflower leaves, etc…

The fall garden is almost planted, arugula going in where the broccoli is done, carrots where the cucumbers were, beets started under the peppers…which are almost done. Many, many kale are started, for replacing the tomatoes when they are done. Busy days! Along with starting our homeschool yeAr, putting up the harvest is the main focus these days!
We are short on eggs though, wAiting on our new young chickens to begin laying, but they are almost there…
We are almost done with the second round of chickens this year, and then we wAit on the turkeys (13 of them…) to process in the fall…
